Mediterranean Vegetable Gratin with Mozzarella & Parmesan!

Ingredients

1 medium zucchini, sliced into rounds

1 medium eggplant, sliced into rounds

2 medium tomatoes, sliced

1 red bell pepper, sliced into strips

1 yellow onion, thinly sliced

2 garlic cloves, minced

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

Salt and pepper, to taste

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

Optional: Fresh basil leaves for garnish

Instructions

1. Preheat the Oven:
Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil.

2. Prepare the Vegetables:

Arrange the zucchini, eggplant, tomatoes, red bell pepper, and onion slices in overlapping layers in the baking dish.

Sprinkle the minced garlic, oregano, basil, salt, and pepper evenly over the vegetables.

3. Drizzle with Olive Oil:
Drizzle the olive oil over the vegetable layers to enhance their flavor and keep them moist.

4. Add the Cheeses:

Sprinkle the grated Parmesan cheese over the vegetables.

Top with shredded mozzarella to create a golden, gooey crust.

5. Bake the Gratin:
Place the dish in the preheated oven and bake for 25–30 minutes, or until the vegetables are tender and the cheese is melted and bubbly.

6. Garnish and Serve:
Remove the gratin from the oven and garnish with fresh basil leaves if desired. Serve warm as a flavorful side dish or a light main course.
