Here is a lovely Lemon Chicken recipe. This is a dish my mum made for us growing up. Here is my version with a twist 🙂.
Serves 4
4 tablespoons olive oil
2 lbs. chicken pieces
6 – 8 lemons, cut into wedges
4 - 6 cloves garlic, minced
3 tablespoons honey
4 sprigs fresh rosemary
1 whole head of garlic, cut in half horizontally
Serve with white rice or quinoa
Preheat oven to 400F.
Heat the oil in a large skillet over medium-high heat. Add the chicken pieces and cook until the skin is browned. If your skillet is oven proof, leave the chicken in the pan. Otherwise, place chicken pieces in a baking pan. In a medium bowl, combine the minced garlic, honey and the lemons. Pour over the chicken pieces. Add the rosemary and 2 halves of the garlic bulb to the pan.
