Is there any food out there when you have it, could be a special occasion... Brings back a flood of great memories? This one is mine... Thai Chicken Curry (a skinny take on it). Love Bangkok, the people, food, culture, smells of the food. I am so excited to go back!!!
Serves 4
4 Chicken skinless breasts
1 large onion finely chopped
100ml vegetable stock
1 clove crushed garlic
1 inch piece fresh ginger grated
2 tablespoons Thai red curry paste
2 chilli’s finely chopped
200g fresh spinach
50ml low fat coconut milk
A handful of fresh chopped coriander
In a large saucepan heat a little olive oil and cook the onions on a medium heat for 3-4 min, add the chicken and cook for 2 minutes on each side, now add the ginger, garlic, curry paste, and stock. Cook for a minute then add the coconut milk. Cover and simmer on a low heat for about 12-15 min.
