Back in the day, Dr Upendranath Brahmachari was a leading doctor and scientist in Bengal who had studied at prestigious institutions like Presidency College and the University of Calcutta.

After completing his graduation in the field of mathematics and chemistry, he changed his path to studying medicine and surgery.
It resulted in securing his MD in 1902 and PhD in 1904.

Later, he worked at the Dhaka Medical School and then the Campbell Medical School in Calcutta. During his tenure, he undertook the challenge of finding a cure for the deadly disease known as kala-azar or black fever, a fatal parasitic epidemic that had killed millions in many countries.
The parasitic disease would blacken a person's skin and viciously attack critical organs like the liver and spleen.
In the absence of treatment, it often led to death.

Dr Brahmachari dedicated 20 years of his life to find a cheap cure without side effects.
Despite working in a room with no electricity and poor water supply in 1920, he discovered Urea Stibamine.

This discovery witnessed a tremendous change in the fortunes of humanity.
It transitioned the 90% mortality rate due to the menacing black fever to a 90% success rate in battling the disease.

He then made sure that many hospitals received his cure for free to fight the epidemic.
This was even before penicillin was discovered.

This unsung hero's research led to a breakthrough that revolutionised the field of medicine and healthcare.
His other notable works involved establishing Asia’s first blood bank in 1935.

Dr. Brahmachari was an acclaimed scientist, so much so that he was considered for the prestigious Nobel Prize not once, but six times.

Once in 1929 alongside the famous Sigmund Freud and five times in 1942.
Despite such groundbreaking discoveries, he could never take the esteemed award home.

However, it was suspected that his ethnicity may have been the prominent reason for him being overlooked at an esteemed forum.
Dr. Brahmachari was never a part of scientific institutions such as the Royal Society and the American Academy of Arts and Sciences.
A defamation campaign allegedly hindered his acceptance into the Royal Society.

Craig’s absolute favorite variety for a tomato sandwich is a Cherokee Purple, and his next favorite options are yellow heirloom or beefsteak. 

He suggested avoiding tomatoes with cracks and never refrigerating them, as this diminishes their flavor and texture.



For those growing their tomatoes, Craig advises picking your tomatoes when they are halfway ripened rather than letting them become completely ripe on the vine. 

Craig reports, “Tomatoes that ripen on the vine, while delicious, are prone to cracking and are more likely to attract pests. 

Once you pick your half-ripe tomato, put it on your kitchen counter to complete the ripening process.

 Don’t put it on the sunny windowsill; certainly, do not store them in the fridge.” 


How To Build Your Tomato Sandwich?

Craig's approach to building a tomato sandwich reflects his unique culinary philosophy. Contrary to traditional recipes, he is staunchly anti-mayonnaise. Here are his steps for making the perfect sandwich.


Cut thick slices of your juicy heirloom tomatoes. 

Cut two slices of bread from a crusty loaf of sourdough. 

Craig recommends an artisanal or self-baked sourdough loaf with a whole wheat blend. 

This is where things get interesting. 

Craig recommends adding a sharp cheddar cheese, like Shelburne aged cheddar or Trader Joe’s Unexpected Cheddar, cut into thin slices.


To assemble the sandwich, spread butter evenly on the outside of your slices of bread.

 Craig prefers salted butter here, but more important than the type of butter is to achieve an even layer of butter, which will help achieve the crispiest bread.


Once your bread is buttered, add half of the slices of cheese to the inside of the bread. 

This will help secure the tomato in the middle and prevent it from slipping out. 

Now add the tomato, then top that with the rest of the thinly sliced cheese. 



Cook the sandwich in a hot skillet until the bread is crispy, the cheese melts beautifully, and the tomato warms through, infusing the sandwich with rich summer flavor.

When an illness befalls a believing servant, if Allah heals him afterwards, then this illness will be a cause for forgiveness for all his past sins and an admonition for him in the future.

Explanation of hadith ============ The Prophet (peace and blessings of Allah be upon him) said, 

'When an illness befalls a believing servant, and he perseveres thinking that it is from Allah, and then Allah heals him, then this illness will be a cause of forgiveness for all his past sins and his future sins. 

For it will be admonition to live from sin. But when the infidels and hypocrites.

When they get sick, instead of being patient, they scream, shout and become disorientated. 

Does not believe that disease comes from Allah. 

After that, when he recovered through treatment etc., he thought that he had a disease, so he took medicine. 

As a result, the disease was cured. That's all.

 He does not believe that God has given him health.

Prophet sallallahu alayhi wasallam,Said, these infidels are basically like a beast.

 When the animal is released from the rope by the owner, it moves into another's crop field.

 When the owner sees that the animal does not stay in one place, is not satisfied with certain food and pasture, then he ties the animal. 

After a day or two when released again and provided with certain food, the beast starts running around again, destroying other people's crops.

The beast does not understand that the owner has tied him up because of his first visit to another's field. 

If I go to someone else's field again, the owner will tie me up again. 

Not realizing this, when the owner lets go of the rope, the animal moves into someone else's field. 

Such is the condition of infidels and hypocrites. 

They also don't understand why they got sick, why Allah healed them again. 

They don't know, they don't care. 

As a result, this infidel is like that beastAnd the hypocrite does not repent from sin, kufr and shirk. 

Allah has said about them - اُولٰئِكَ كَالْاَنْعَامِ بَلْ هُمْ اَضَلُّ ؕ اُولٰئِكَ هُمُ الْغٰفِلُوْنَ They are like four-legged animals, nay, they are worse than that, these people are heedless and heedless.

Known for being the latest-rising full moon of the year in the Northern Hemisphere, the “Strawberry Moon” is always the lowest-hanging full moon.


This is because it mirrors the sun's position; when the sun is at its highest, the full moon, being opposite the sun, will be at its lowest point in the sky.


This year, the effect was even more pronounced due to the once-every-18.6 years major lunar standstill.


During this period, the tilts of the moon and Earth are at their maximum, causing the moon to rise and set at the furthest points on the horizon.


The moon rose about five degrees beyond the ecliptic, the sun’s path through the sky, making it appear about five degrees lower than the sun does on the winter solstice.


This was best observed at Friday’s full moonrise.


The dark patches visible on the moon, known as maria, are solidified lava plains from about three billion years ago.


Mare Tranquillitatis, or the “Sea of Tranquility,” was the landing site of Apollo 11 in 1969, the first time humans landed on the moon.


This feature can be seen on the left-hand side of the moon when viewed from the Northern Hemisphere.

Hajiganj Fort,the protector of Dhaka during the Mughal period,is being destroyed due to neglect.

This Hajiganj fort is one of the three water forts built in the 17th century to protect Dhaka from the Portuguese and Mughal pirates. 

The other two are Sonakanda fort located on the east bank of Shitalakshya river and Idrakpur fort located in Munshiganj district. 

Hajiganj Fort is a water fort built during the Mughal period. 

This is NarayanganjLocated on the west bank of Shitalakshya river in Hajiganj area of the district. It is also known as Khizirpur Fort. 

It is believed that the fort was built immediately after the establishment of the Mughal capital at Dhaka by the Mughal ruler Islam Khan in 1610 to repel the attacks of Mughal and Portuguese pirates on the river. 

It is also believed that this fort was built during the reign of Subadar Mir Jumla of Bengal in approximately 1650.

Future of backpacking uncertain as hostel charge more for European summer stays!

Keiarna Brooks is worried backpacking will be more unattainable for young people as the cost of travel increases. 


Price hikes for hostels this summer in Europe are pushing budget travel out of reach for young Australians keen on a backpacking trip.

Keiarna Brooks has travelled across New Zealand, Canada and the United States over the past 18 months, and has noticed how high prices have climbed for accommodation.

The 20-year-old from the Sunshine Coast made plans to go to Europe this August, and was shocked by how expensive dorm rooms in a hostel have become.

Why women are opting for solo travel
Here's a taste of solo travel from the eyes of three Aussie women.

"It's definitely an obstacle, and it's skyrocketed since COVID," she said.

"I've booked Vienna for two nights for two people, and that was 128 euros ($213)," she said.

"It's crazy … three nights in Amsterdam is looking like about $200, and this is in a four-bed mixed dorm."

Rachel Davey, who has backpacked across 195 countries, documents her travels with her partner Marty as part of their blog the Very Hungry Nomads.

She's noticed how different the costs of a European summer have become.

"I think it's sad that it has become more expensive for young people to travel," she said.

In the period from April 2023 to April 2024, almost 10 million residents returned to Australia from overseas — an increase of more than 4.7 million on the previous year, according to the Australian Bureau of Statistics (ABS).

Fifty-seven per cent of people who travelled did so for a holiday, with 1.57 million Australians departing for overseas last month.

Despite masses of tourists returning over the past two years, managers of hostels across Europe say the accommodation price hikes have been necessary to recover from the pandemic.

Macarena Herrero Romero, who manages hostels in Madrid, Brussels and Bilbao, said inflation has caused a massive spike in day-to-day running costs.

"The increase in the price of utilities [post-pandemic] was huge," she said.

"Electricity, water and our laundry service all increased their prices.

"We make huge efforts not to increase our prices, but it was crazy last year."

Hayden Alexander, who manages a hostel in London, said electricity has definitely been a factor in the increased cost of a bed.

"We have seen that average price slowly creep up in those peak seasons," he said.

"You see bed rates are climbing up a lot higher than they used to be.

"[You're] probably looking at about a 20 per cent increase in a standard dormitory bed."

Even mixed dorms with up to 20 people, which are usually the cheapest option, are currently averaging about 30 to 56 British pounds ($57 to $110) per night in July.

The increase in price is also due to hostel guests expecting more than a bed from their stays, Venice Hostel manager Gianluca De Vit said.

Many now offer private rooms, modern designs, free events and a choice between mixed dorms and smaller amounts of beds in dorms which vary in price, to compete with other providers.

"You have to organise events free for your guests, but somehow you have to recover that money — maybe in the accommodation," he said.

"So of course they are going to attend the event, but maybe even pay three, four, five euros extra in accommodation."

Mr Alexander said the private rooms in his London hostel are designed to compete with lower-cost budget hotels, which is reflected in the price.

As a result, young backpacker-types aren't the only travellers attracted to this accommodation style.

'Flashpackers' changing the face of hostels
Ms Davey agrees guests in hostels aren't just young people on a budget anymore.

High demand means "flashpackers", who travel like backpackers but have more money to spend, will pay higher prices for rooms in hostels. 

"After COVID I think we missed a couple of years, [so now] everyone's travelling again and there's not enough accommodation — and hostels are usually in a really good location.

"So maybe they're putting the prices up because demand is there, because they can ask for that and they'll get it."

Ms Brooks is travelling to Europe while she can, as she thinks it will become less popular attainable over the next few years. 

She said there are other parts of the world where it's still cheap to go backpacking.

"You can travel in Asia on $6000 if you're smart with it," she said.

"How far would that go in Europe?"

Cheaper alternatives


Last year, Skyscanner — based on consumer searches — found that 42 per cent of Australians believe the cost of flights to destinations is the biggest factor in deciding where they will go.

Search volumes for China, Japan and Thailand, which are closer to home, have therefore increased dramatically.

Every winter a large cohort of Australians head north for the European summer. But with growing tourism hostility sweeping many visitor hotspots, they may not be getting such a warm welcome.

Miss Davey agrees there are still other options for cheaper travel for young people.

"You can make your money go further [in place] like South-East Asia and Latin America," she said.

But if young people want to experience a European summer, she believes they can still find a way.

"[It's worth looking at] other cities in popular countries, for example in Greece, instead of Corfu and Santorini there are smaller islands where you can get a cheaper room or dorm," she said.

Mr Alexander said forward planning and going in "shoulder seasons" — the months either side of the summer season, which is typically between May and August — would also help travellers save.

Connections and safety 'worth it'
While she may yet re-evaluate the timing of future trips, Miss Brooks said the hostel experience was still a vital part of her travelling.

"It's expensive, but you go to meet people and for the connection," she said.

"As a solo traveller, it's also for safety … being around other people."

Ms Davey agrees hostels are still a great way for young people to learn and gain confidence.

"I think budget travel is still achievable, depending on where you're going, and I still encourage young people to do it," she said.

A spiced yogurt marinade tenderizes and seasons the chicken, with saffron adding a rich flavor and golden hue. 

Toasting whole spices and grinding them into a coarse powder infuses the dish with powerful aroma and flavor. 

Caramelized onions provide a deep flavor base and a flavorful garnish. 

Using a Hyderabadi-style biryani technique, this recipe combines juicy meat, fluffy rice, and tender vegetables, making it my go-to dinner party recipe.

Personal Background As a South Indian who grew up in Texas, my concept of "home food" blends my family's Tamilian cuisine with Texan influences. 

My roast chicken recipe reflects both: a Texan love for a big roast bird cooked in a cast iron skillet, combined with the spice profile and cooking technique of an Indian biryani.

What is Biryani?

 Biryani is a celebrated Indian dish, featuring perfectly cooked spiced basmati rice with meat and/or vegetables. 

It has many regional variations across India, evolving through the Mughal Empire's influence. 

The Hyderabadi biryani, which I incorporate into this recipe, involves simultaneous cooking of meat and rice, heavy use of spices, steaming to promote cooking, and a variety of textures in the final dish.

Making My Biryani-Style Roast

 ChickenSpice Blend:

 Freshly toast whole spices like cardamom, cinnamon, cumin, and more, then grind them.

 This creates a bold aroma and rich color essential for a good biryani. 

I use Pequin chile for a Texan twist and allspice berries instead of anise.

Yogurt Marinade: 

A yogurt-based marinade ensures moist, juicy meat.

 Let the chicken sit in the marinade for at least two hours, or preferably overnight, for the best flavor.

Vegetables: 

Incorporate potatoes, zucchini, and caramelized onions for a complete meal. Potatoes pair naturally with chicken, and squash melds into the rice during cooking.

Par-Cook the Rice: 

Par-cook basmati rice in chicken stock to add another layer of chicken flavor and ensure even cooking.

Cook in Cast Iron:

 A cast iron skillet or Dutch oven retains heat well, ensuring a great sear on the chicken and proper cooking of rice and vegetables. 

Use a 14- or 16-inch skillet for ample

 space.

Spatchcock the Chicken: 

Butterflying the chicken allows for even cooking and better flavor integration with the rice and vegetables.

Presentation: 

Let the dish rest covered for 15 minutes post-cooking.

 For a great presentation, transfer the rice and vegetables to a serving platter and top with the spiced chicken.

Recipe Details Ingredients:

For Potatoes with Saffron

 Yogurt:1/3 cup plain whole 

milk yogurt2 pinches of saffron threads1 tablespoon ghee1/2 pound small red potatoesKosher salt

For Biryani Spice Mix:

1 1/2 teaspoon caraway seeds1 

1/2 teaspoon black peppercorns1

1/2 teaspoon coriander seeds1 

1/2 teaspoon cumin seeds1 

1/2 teaspoon fennel seeds6 dried Pequin chile 

peppers8 green cardamom pods1-inch piece of cinnamon stick4 

whole cloves4 dried allspice berries1 teaspoon ground nutmeg

For Chicken and Marinade:

1 bay leaf1 1/2 cups plain whole milk yogurt15 dried Pequin chile peppers,

 coarsely ground6 medium cloves garlic, chopped1-inch piece fresh ginger, grated2 tablespoons ghee

1 tablespoon jaggery or coconut sugar

1 tablespoon honey

1 tablespoon kosher salt

1/2 teaspoon ground turmericJuice from 1 lime

1/2 cup chopped fresh mint leaves1/4 cup minced fresh cilantro3 1/2-4 

1/2 pound whole chicken

For the Biryani:

1 cup basmati rice1 cup chicken stock

2 tablespoons neutral oil

1 tablespoon ghee2 medium yellow onions, thinly sliced3 medium zucchini, sliced into half moonsFor Garnish:

Fresh cilantro, chopped1 lime, halved

Directions:

Saffron Yogurt and Potatoes:

Mix saffron strands with yogurt and ghee, refrigerate 6-12 hours.Boil potatoes with salt until tender, drain, and combine with saffron yogurt.

Biryani Spice Mix:

Toast spices individually, grind into coarse powder, store in airtight container.

Chicken and Marinade:

Toast bay leaf. 

Combine yogurt, spices, garlic, ginger, ghee, jaggery, honey, salt, lime juice, mint, and cilantro.Spatchcock the chicken, coat with marinade, refrigerate at least 2 hours.

Biryani:

Preheat oven to 425℉. Rinse and par-cook rice in chicken stock.Cook onions until golden brown, set aside.

 Sear chicken in cast iron skillet, add onions, zucchini, and yogurt-dressed potatoes. 

Layer par-cooked rice, cover and bake until chicken is cooked through (about 1 hour).

Serving:

Let rest 15 minutes, transfer rice and vegetables to a platter, top with chicken. Squeeze lime over and sprinkle with cilantro.

Special Equipment:

Cast iron skillet or Dutch oven, spice

 grinder or mortar and pestleNotes:

Jaggery can be found at Desi food stores or substituted with coconut sugar.

If Pequin chiles are unavailable, substitute with chile de árbol or Tien Tsin chiles.

Store marinated chicken in a non-reactive container.

Spice mix can be stored for up to 2 weeks.

 Caramelized onions can be refrigerated up to 3 days ahead. 

Potatoes with saffron yogurt can be refrigerated for up to 1 day.

Make-Ahead and Storage:Leftovers can be refrigerated for up to 3 days.
