French Toast Breakfast Sandwiches

Ingredients

French Toast:

4 large eggs

½ cup milk

1 tsp vanilla extract

1 tsp cinnamon

8 slices of brioche or Texas toast

Butter for cooking


Sandwich Filling:

4 slices of cooked bacon or sausage patties

4 slices of ham (optional)

4 slices of cheddar or American cheese

4 large eggs (scrambled or fried)

Maple syrup, for serving (optional)

Instructions

1. Make the French Toast Batter: In a shallow bowl, whisk together eggs, milk, vanilla extract, and cinnamon until smooth.


2. Dip & Cook the Bread: Heat a nonstick skillet or griddle over medium heat and add a small amount of butter. Dip each slice of bread into the egg mixture to coat both sides, then place on the skillet. Cook each slice for 2–3 minutes per side until golden brown. Repeat for all slices and set aside.


3. Cook the Eggs: In a separate pan, cook your eggs to your preference—scrambled or fried. Season with salt and pepper as desired.


4. Assemble the Sandwiches:

Take one slice of French toast and layer it with cheese, a cooked egg, ham (if desired), and a slice of bacon or sausage patty.

Top with another slice of French toast.

Repeat for all sandwiches.



5. Serve: Enjoy warm with maple syrup if you like a sweet-savory mix.
