 Apple Spinach Salad with Honey-Mustard Lemon Dressing


1. Ingredients:

o 6 cups baby spinach leaves

o 2 large apples, thinly sliced

o 1/2 cup crumbled feta cheese

o 1/4 cup dried cranberries

o 1/4 cup sliced almonds, toasted

o 1/4 red onion, thinly sliced

o 2 tablespoons olive oil

o 2 tablespoons apple cider vinegar

o 1 tablespoon honey

o 1 teaspoon Dijon mustard

o Salt and pepper to taste

Directions:

12. In a large salad bowl, combine the baby spinach, sliced apples, crumbled feta cheese, dried cranberries, toasted almonds, and thinly sliced red onion.

13. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined.
