**πŸŒ™✨ A Taste of Home: My Family’s Shahi Halim Recipe for Ramadan**

There’s something magical about recipes passed down through generations, especially during Ramadan. This *Shahi Halim* — rich, hearty, and steeped in love — is my go-to for iftar gatherings. Sharing it here so you can recreate that cozy bazaar-style flavor right at home!

**🍲 You’ll Need:**

- **1 kg bone-in meat** (beef, mutton, or chicken)

- **2 tbsp mustard oil**

- **1 packet Khasi Food Halim Mix** (the secret spice blend!)

- **½ cup finely sliced onions**

- **Fresh garnishes**: green chilies, ginger slices, cilantro, lemon wedges, cucumber

- **Water** (as needed)

**✨ Let’s Cook Together:**

1️⃣ **Soak the Mix**: Empty the Halim packet into a bowl, pour 2 cups of hot water over the grains, and let soak for 5 mins.

2️⃣ **Temper the Oil**: Heat mustard oil in a heavy pot. Fry onions until golden, then set aside ⅔ for garnish.

3️⃣ **Brown the Meat**: Add meat to the pot with remaining onions. Sizzle for 5-6 mins until fragrant.

4️⃣ **Slow Simmer**: Pour in 4 cups water, bring to a boil, then reduce heat. Let the meat cook until tender (30-40 mins).

5️⃣ **Add the Grains**: Stir in the soaked Halim mix + soaking water. Simmer on low, stirring often with a *wooden spoon* to prevent sticking. Cook until creamy and thick (about 1-1.5 hours).

6️⃣ **Season**: Taste and adjust salt. For extra depth, finish with a drizzle of mustard oil or a pinch of garam masala.

**🌿 Serve with Love**: Ladle hot Halim into bowls. Top with fried onions, cilantro, green chilies, ginger, cucumber, and a squeeze of lemon. Pair with naan or dates!

πŸ’‘ *Pro Tip*: Double the batch and freeze portions for busy iftar nights!
