Ingredients:
6 cups mixed greens (e.g., lettuce, arugula, spinach)
1/2 cup cherry tomatoes, halved
1/4 cup thinly sliced red onion
1/2 cup cucumber, thinly sliced
1/4 cup black or green olives (pitted)
1/4 cup crumbled goat cheese or feta
1/4 cup walnuts or sliced almonds (optional)
For the French Vinaigrette:

3 tablespoons olive oil
1 tablespoon red wine vinegar
1 teaspoon Dijon mustard
1 teaspoon honey or maple syrup
1 small garlic clove, minced
Salt and pepper to taste
Directions:
Prepare the Vinaigrette:
In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, honey, minced garlic, salt, and pepper. Adjust seasoning as desired.
Assemble the Salad:
In a large bowl, combine the mixed greens, cherry tomatoes, red onion, cucumber, olives, and nuts (if using).
Dress the Salad:
Drizzle the vinaigrette over the salad and toss gently to coat all ingredients evenly.
Add the Cheese:
Sprinkle crumbled goat cheese or feta over the top for a creamy finish.
